Vinification and Aging
Vinification: Thinning of shoots and early clusters throughout the maturation period with further bunch selection at harvest. The grapes receive a gentle pressing followed by (static) decantation to the steel tanks for fermentation at 14/16° C.
Aging: In steel fermenting on indigenous yeasts with periodic mixing.
Tasting Notes
It has a pinkish colour with nuances that tend towards amber, red hues. Wild rose is in evidence on the nose and hints of grapefruit. The mouthfeel. is fresh, direct, pleasant and with considerable minerality. Suggested serving temperature: 9-10° C.
